I think season 4 had the biggest character growth for Rick.

At the beginning of the season he was just farming and trying to be a good father every day. He didn't want to be in charge, he didn't even want to be part of the council that votes on things, hell, he didn't even carry a weapon. When the governor rolled up with a tank in the midseason finale his reaction was scared: "I'm not in charge, I don't make decisions anymore"

By the end of the season he was a bearded savage who bites out the jugular of anyone trying to fuck with him. When they all ended up in Terminus, his reaction was calm and confident: "They're fucking with the wrong people"
