The Dothraki have almost become set pieces by this time. All the named Dothraki are dead. None of those remaining have any real dialog, unless you want to count insulting the Lannisters' fighting ability.
But here's the real puzzle: this is a culture built upon raising and riding horses across wide open spaces. Not only couldn't they give a fuck about castles, the whole idea of living behind walls and not under the stars is an anathema to them. Is Dany going to give them castles and titles? I don't think so. They aren't going to farm, it's against their beliefs to till the land which is like cutting the flesh of Mother Earth.
And what of their favorite things? Fighting... they can do that for a time but fighting to subjugate, loot, rape, and enslave? Well that's not going to fly under Dany. As soon as she comes to power she's not going to want any fighting for the sake of fighting.
It doesn't seem like Westeros will welcome a wandering hoard. So do the Dothraki slink home after the war, far fewer in number, leaderless, with great portions of their culture verboten but no new culture to replace it, and only material rewords which can be carried back? At least they could return to riding the plains but this seems like a shit deal overall.
