Melisandre is constantly on the hunt for the answers to the afterlife. Always asking people who have been what they saw/experienced. Unfortunately not even those reanimated are able to give her any clues as to what lies beyond citing that "there was nothing" or it was "just dark". Nothing.
MY CURRENT THEoRY: those resurrected - i.e. John snow and Beric Dondarrion - don't know because their bodies were not BURNED or "FROZEN" (left as is and taken over by the Night King) from the time they died to the time they were resurrected. If either of those things had happened their souls wouldn't have a place to go back to should they try to be resurrected.
BASIS oF CLAIM: the characters of GoT might be divided on a lot of things but something that seems to be common throughout the world is the belief that the soul of a person cannot truly pass on to whatever is next until their body is BURNED. I pulled this theory specifically thinking about the time Daenerys sent her three bloodriders in different directions to see what was there and the one's horse came back with his severed head in the little satchel thingy. That one woman who knew him weeeept for him, saying that he wouldn't be with his ancestors because they didn't burn his body. There are countless other examples of this belief throughout the world of GoT including [insert whichever one you just thought of].
ADDITIoNALLY: Now I don't know but I've been told (by Melisandre and others) that the lord of light has an army. My continued theory is that when bodies ARE burned they actually join the lord of lights' army while the rest become a soldier for The Night King, get buried**, or most likely just decompose. Now who's to say the LoL's army (LOL!) are the good guys idk cuz he defs did tell Melisandre to burn Stannis' daughter and that wasn't great. But in terms of the mystery behind the afterlife in GoT - see above.
**I think that's why Bran saw Ned Stark in the crypt below Winterfell (a) cuz of classic three-eyed raven factor BUT MAINLY because (b) they buried him below Winterfell and very much did not burn his body. also his head was on a pike...
