It makes sense that Daenerys rides Drogon because Drogo was her husband and the namesake for Drogon. It would also make sense if Jon Snow potentially rode Rhaegal because Rhaegar is supposedly his father. But the Night King rides Viserion... I can't come up with a good reason for this, but I'm wondering if anyone else on here has considered the connections to the dragons and the meaning behind it.
