Let me start by saying I do agree with some of their explanations. Some. He is a businessman, who has been leading an enormous and extremely risky operation for years, so he *should* do what is needed to protect it.
But I just think there is much more to him that makes him indefendably evil. We see in Breaking Bad he mentally tortures Hector. Now, personally I am a guy who isn't against vengeful actions, and Hector *did* deserve revenge, but enough is enough. He went way too far. By this I mean his revenge was more than fulfilled. To the ones of us who watch Better Call Saul, we *know* Gus already made Hector's life miserable since years before the events of Breaking Bad. Gus got blinded by revenge and, as we know, that eventually led to his downfall.
Of course this is not my only point. I think Gus has unrealistic expectations about people. In Breaking Bad at least. He really thinks saying "No more children" will resolve everything, Jesse will be satisfied and everything will go back to normal. Moreover, I think Gus completely overreacts about the events at the end of season 3. The two dealers got what was coming to them, and if Gus had "handled it" like he says they should have let him, he would probably just have said "Don't do it anymore" that would have accomplished nothing. Also, Gus clearly ordered the murder of Tomas. He even admits he has no problem with killing kids ("I will kill your infant daughter").
Lastly, and maybe a lot of people will disagree, maybe not, I do think Gus is a psychopath. You can say he only kills when he *has* to. If you can cut a guy's throat open with a box cutter, suffocate a man with a bag or not hesisate to kill a whole family all without flinching, I think you're a psychopath.
