Unpopular opinion but I'd rather see a spin-off show based on 'A Knight of the Seven Kingdoms' rather than about the Targaryen Conquest. I just find the down-to-earthness of that book and the three stories in it would do so much more for world building. It also would link to characters we see in the original series (Maester Aemon and Bloodraven aka The Three-Eyed Raven
