Title speaks for itself. I love GoT for it's world-building and lore but unfortunately not all the houses are relatively remarkable like Houses Stark and Lannister, or even some other ones like Redwyne in the books. A house I want to see more of is House Sarsfield? Why you ask? Literally only due to it sharing a name with the street I live on. It made me grow a bit attached to it so I'd love to see their banner posted around Westeros more.
