My #1 go-to for these conversations is Oberyn Martell. I know he was a fan favorite for many even pripr to the show but I found him generally boring and did not care much about hos fate except for how it affected Tyrion. However, Pedro Pascal dripped charisma and made me love the character.
Similarly, Varys was mildly annoying in the books and bland when not irking me. However Conleth Hill brought that suave intrigue to the character that I felt GRRM never did.
Iain Glen as Jorah Mormont and Natalie Dormer as Margaery Tyrell are two others I like in the show but am indifferent to in the books but I think that has a lot more to do with the increased prominence of each in the adaptation
All that said, the person who fundamentally changed my entire opinion on a character -- bringing them from someone I despised to someone I actually sympathized with and felt genuine feelings for -- was Alfie Allen as Theon Greyjoy. Even in ADWD, I had no feelings for Reek. I did not take pleasure in what Ramsay did and was doing to him, but wasn't very moved either. From his rape of the captain's daughter en route to Pyke up through his sacking of Winterfell, he fell further and further from my already dim view of him but Alfie brought such pathos and pity to the character that Ramsay forcing him to watch him rape Sansa was probably one of the most gut wrenching moments of the show to me. Truly a magnificent portrayal.
